Stop Overthinking CACIO E PEPE | A Foolproof and Totally Traditional Recipe
Переглядів 89 тис.День тому
Cacio e pepe (literally "cheese and pepper") is one of the simplest pasta dishes out there, yet one of the trickiest to master. Many cooks struggle to create a creamy sauce without thick clumps of stringy cheese, and much of the culinary internet space has devoted itself to finding "foolproof" methods for preparing it. Many of these methods technically work, but they also tend to radically chan...
Amazing Italian Panini that are WORTH THE EFFORT
Переглядів 55 тис.14 днів тому
A lot of people ask us for more Italian sandwich recipes. The only problem is that the vast majority of Italian panini are so good because they're so simple: simple enough that no one needs a recipe. Usually the name is enough. A mortadella sandwich is... mortadella and bread. However, there are a few Italian sandwiches that take a little more time and a little more effort to make. But trust us...

To illustrate the signs we look for, we decided to play a game of "Restaura...

My favorite zucchini dish is a zucchini muffin, but it’s not like zucchini bread it’s closer to a quiche. You shred the zucchini and ring the water out of it, coat it lightly with flour, mix in an egg (or two depending on the size of the batch) and some Parmesan and/or sharp cheddar and bake, it’s so good! Sometimes if I have one on hand I’ll also grate a carrot in.

This applies elsewhere too, in many countries people will say "nescafe" instead of instant coffee. There are many brands that did that for one item or other in some place or other.

I understand this completely. My mother is Japanese from Osaka and my father is American from Alabama. Also, I was born in Hawaii. So, I am half Japanese and half Alabaman, born in Hawaii and growing up in San Diego, California which is next door to Mexico. Please, for a moment, can you imagine how the Japanese, Alabaman, Hawaiian, Californian and Mexican influence has done for my palate? For example, my father taught me to eat my rice with butter and shoyu (soy sauce). It is delicious buy my mother made me promise to never do this in front of her mother. To my mom, it was not only disgusting to her but disrespected the rice! And, Harper, I also love ketchup on my hotdogs. I also love to dip my gyoza (a Japanese dumpling also some know it as potsticker) in ketchup. 30 years later I learn that putting butter and shoyu on rice has become popular in Japan! It is inevitable that because people like me who are fortunate to grow up with the palate and influence of many cultures will develop the cuisines to accommodate the flavors of our childhood. I love your program and I'm thinking that it is possible that in a past life I must have been an Italian! <3

I have mixed feelings about this topic. I grew up in a New York Sicilian household, and I've always enjoyed Italian American restaurants that serve food of the style born in the Little Italys of New York and Argentina (they're basically the same). At the same time, I love traditional Italian restaurants that are harder to find. Usually, you're going to find places that cater to both, which I think is fine.

Luckily for me, I can get many things Eva talks about from an Italian market in Paris. I married a Frenchman 35 years ago and have been living in France for 30 years. Shopping was the biggest change. I only go to the supermarket for paper products mostly. Because, I buy from local butchers, fruit and vegetable shops, my Italian and Lebanese shops. But, my favorite is the outdoor market with almost everything you could wish for.
